@kara i don't think there's any one right answer - all of those things are great for different purposes, though of the 3 i've had the least luck with pickling fruit.
we had a bumper crop of apples from the tree out in the yard a couple seasons ago, and made applesauce, apple butter (basically applesauce but cooked down for a long time in a crockpot), and sliced apples in both brine & whiskey for canning. the brine ones were... pretty weird.
